Ingredients Needed for this recipe:
– 8 oz Chicken Breast (trimmed)
– 1 Red, 1 Green, 1 Orange Bell Pepper (sliced)
– Sliced Mushrooms (as much as you like)
– 2-4oz Monterey Jack Cheese
– Garnish with Parsley
– FOR THE WET RUB: 1/4 cup olive oil, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1 teaspoon chili powder, 1oz El Yucateco Red Sauce. (MIX TOGETHER WELL)
Always wash your hands before prepping any food recipe!
WET RUB: Combine above listed Rub ingredients into a bowl and mix together well.
Trim chicken if needed, apply rub and allow to sit for a few minutes in the fridge while you prepare the vegetables and preheat your cooker or pan. Be sure to wash your veggies and slice them as shown in video. Cook chicken to safe temperature flipping as needed, cook veggies alongside until they reach your desired doneness/texture. Heat the skillet during the cook then build by placing the veggies on the skillet, then the chicken breast (fully cooked), next add some cheese to the top and melt! Garnish with parsley if you wish, NOW ENJOY!
