NO BAKE Blueberry Cheesecake | KETO LOW CARB CHEESECAKE

THE CRUST
2 cups of almond flour (toast for 5 minutes until brown)
6 TBSP of melted butter
3 TBSP of your favorite sugar-free sweetener (I used erythritol)
** Press firmly and chill in the freezer

THE FILLING
200 g heavy whipping cream
200 g of cream cheese
1 tsp lemon juice
7 TBSP of your favorite sugar-free sweetener (I used erythritol)
1/2 tsp pure vanilla extract (optional)
1 sachet or 2.5 tsp of of Knox gelatin

BLUEBERRY TOPPINGS
200 g of blueberries
100 ml of water
2 tbsp sweetener (I used erythritol) and 2 grams of Monkfruit sweetener
1 tsp lemon juice
1 tsp gelatin
Chill for 4-6 hours , better if overnight 🙂
