High protein snack made with broccoli and spinach without any oil. This turned out crispy and delicious. The spices I used made this cutlet more flavorful. Call it burger, cutlet, tikki, fritters, patties, or an appetizer. Healthy and nutritious filled with goodness of veggie and lentil. I used moong dal flour. I am also showing how to dry roast cumin in the air fryer. And I roast veggies in the air fryer to make these delicious mouthwatering healthy snack. You don’t need potato for binding or rice flour to make it crispy. This recipe shows how to achieve the crispy texture with easy method. Include this low carb high protein snack in your regular meal plan, weight loss diet, or protein rich food. Great for kids and adults. Enjoy it hot with mint chutney! Crispy Lentil Vegetable Cutlet in Air Fryer – ZERO OIL RECIPE
(Vegetable Cutlet / Vegetable burger / Vegetable patties / Vegetable Kebab or kabab)
Broccoli and Spinach Cutlet
Serves 4 to 6 people. Cut the recipe in half for 2-3 people
1 Pound (6 cups) of Broccoli Florets
6 cups of Spinach
2 medium size onion chopped
2-4 green chilies (optional)
2 cups moong dal flour
1 Tablespoon Roasted Cumin Powder
1 Teaspoon Garam Masala
1 Teaspoon Crushed Black Pepper
2 Teaspoon Pink Himalayan Rock Salt (Use any salt as per your taste)
2 Tablespoon chopped Sun Dried Tomatoes
NO OIL REQUIRED
Dry roast cumin seeds:
Add 1 tablespoon of cumin seeds in the basket. Air fry for 10 min under 370 degree F, shaking in between. Grind and keep it aside.
Roast the vegetables:
Add broccoli, spinach, and onion into the basket. Air fry for 10 minutes under 370 degree F, mix it half way through. If you are cutting the recipe in half, air fry for 8 minutes.
Once the roasted veggies are cooled down, finely chop with a knife or use a food processor to coarsely grind for 3 to 4 seconds. Transfer it into a mixing bowl. Add moong dal flour, green chillies – optional for some heat. You may avoid it while making for kids. Add in the garam masala, roasted cumin powder, salt, black pepper, and chopped sun dried tomatoes. Mix it well until you are able to bind it into a desired shape.
Air Fry Directions:
Pre heat air fryer. There is no need to spray any oil. Place the cutlets into the basket making sure they are not over crowded. Then air fry for 10 minutes under 370 degree F. Open, turn the cutlets and air fry for an additional 8 minutes. Serve it hot with mint chutney. Enjoy!

If you don’t have an air fryer, you may bake it in the oven or shallow fry in a pan.
