Keto Low Carb Chocolate Cake in a Mug

hi it's Karalee from Wise Woman Ways and today i want to show you how to make keto low-carb chocolate cake in a mug in the microwave So it's a great early morning snack that I like to eat and make for my kids you start with two tablespoons of coconut flour and I like to use Bob's Red Mill I really like these products and then two tablespoons of cacao powder and today I'm using wilderness poet's living raw foods which is a little unfortunate because it won't be raw anymore after I put it in the microwave but two tablespoons of raw cacao powder and then half a teaspoon of baking powder which is also Bob's Red Mill which I like because it's aluminum free and then you need one egg and I happen to be out of eggs today but as an egg substitute you can use 1/4 a cup of unsweetened applesauce or you can use 1 tablespoon of flax ground flax with 3 tablespoons of water and you mix that together and let it sit for a minute and it starts to get gelatinous sort of like an egg and then put that in there and it works really well what are you barking at and then 2 tablespoons of milk you can use coconut milk or almond milk any kind of milk I have coconut milk today and then I like to take a fork and kind of mix that up whisk it a little bit and then I have 2 tablespoons of melted coconut oil and then as a sweetener I really like month monk fruit I've gone through a variety of sweeteners but this one tastes the most like sugars to me and you can use it one on one exactly like sugar and this is Lepanto brand monk fruit sweetener and you put two tablespoons of that and then you add and it starts to get pretty thick in there which is fine coconut flour usually is pretty thick but it'll pick up really nice and then you add half a teaspoon of vanilla and then well I'm um stirring that I have three little squares of chocolate that I'm gonna pour on top is like a frosting and I use this I'm not sure how to say it tight ow ta I tau exclusive selection this is 90 percent chocolate they also have a 99% and sometimes I mix the 99 and the 90 together but today I only have the 90 percent and I'm going to put that in the microwave for one minute I finish stirring this up and then you sort of Pat it down nice and flat messy around the edges and it is kind of gunky it's really a thick dough but that will work out just fine and then let me check on a chocolate this is actually a very low carb keto breakfast that I eat in the morning sometimes with my coffee I have my cup of coffee here and with my coffee one of my favorite things is to add this new me Rubeus chai which is an herbal tea and I like to throw that in there for a minute it makes a really nice try coffee get my chai going it's really good with the chocolate cake all right so let's switch this in there I like to do a keto diet for several reasons main one is I have a couple out of autoimmune disorders and keto low-carb diets are really good for that a lot of vegetables and fruits have lectins and anti nutrients in them and so I really do well on a high fat low carb ketogenic diet and the other reason is depression is really can be really problematic here in Alaska we're heading into fall and soon I'm not gonna have much light and just ketogenic diets are so stabilizing and calming for mental health and since I've been doing that I have felt really good physically I have the autoimmune disorders and I've also felt really great mentally and so I'm just really careful about what I put in my in my body and most days I actually eat eggs and some kind of meat I eat a lot of beef organs I do eat bacon and eggs I usually eat a pretty heavy protein dense breakfast and I don't often eat lunch and then I eat eat dinner but every once in a while this is a nice little break of the routine and this keto chocolate cake is just super yummy and the kids love it it tastes exactly like chocolate cake my little chocolate topping there anyhow the cakes do it any more seconds and then I'll show you it turns out exactly like a chocolate cake and it's a pretty big helping so you could actually probably cut the recipe into and put it into smaller coffee cups but it just turns out spongy and beautiful and yummy and two more seconds here see that super light and flaky and then I like to put a little drizzle of chocolate over the top two or three squares with my chai coffee so have a great day start with a great breakfast and use your wisdom to treat your body well
