One of the best food that I can still enjoy since living low carb is fried rice. Who could have imagined that there are zero carb rice which are healthy and so versatile as they can be made into savory and sweet dishes. That’s why miracle rice and noodles are my savior.

This is a simple and tasty fried rice which can be dished up in a few minutes. I love colorful dishes as we eat with our eyes so bell peppers are a good way to add colors and they’re low in carbs too.

I like to use egg yolks for fried rice as they add such a vibrant golden color to the dish. Plus it’s a good way to use up my leftover egg yolks from making those low carb almond buns which only requires the whites.

In this video, I cooked for two portions but the recipe provided here is for one portion. You can replace the protein and veggies with anything that you like.

INGREDIENTS
1 packet of miracle rice from Miraclenoodle
1 boneless chicken thigh (cubed and marinade with soy sauce, pepper & sesame oil)
1/2 cup shrimps (cubed)
1/2 cup diced yellow bell peppers
1/2 cup diced green peppers
1 tbsp minced garlic
1 to 2 bird eyes chilies (optional)
3 egg yolks or 2 whole eggs
1 1/2 tbsp fish sauce
Salt and pepper to taste
Spring onions (chopped) for garnishing

DIRECTIONS
1. Prepare miracle rice per instructions on packaging.
2. In a pan, stir fry the minced garlic until fragrant then add the chicken and shrimps. Stir fry for awhile then add the chilies, bell peppers and seasonings. Add miracle rice and mix evenly. Push the rice to one side of pan, add the egg yolks and scramble until almost dry then mix well with the rice. Adjust taste accordingly.
4. Garnish with spring onions.
