Carbohydrates are converted into fats in the body so if one consumes too much of carbohydrates it converts into fat and leads to obesity So, that's why we all recommend as nutritionists, low carbohydrate diet Carbs are of 2 types, there are complex carbohydrates and there are refined carbohydrates Complex carbohydrates are basically foods which are white in color, just for as a hint Things like rice, pasta, noodles, biscuits, cookies made out of flour So, a low carbohydrate diet would be something which we do not include all these things

Now a days in market there are lot of derivatives which you get, which are made out of wheat flour rather than rice flour and other things which are high on carbs Even things like corn are rich in starch, so they are high in carbohydrates What is the reason for not wanting to take too much of carbohydrates as I told you is it that it converts to fat which gets stored in the liver, and leads to obesity finally But, today you have lot of other options which are low carb foods like wheat grain attas, pops You have lot of snacks made out of wheat base today, you have ragi, you have barley, you have jowar, they are all low in carbohydrates so they are recommended rather than taking carbs as in even carbs even the fat as in ghee, butter, lard, lard is animal fat is not recommended today because round the globe in fact even now a days you see round the globe people are so conscious about what they are eating, that's the reason you have lot of low carbohydrate salad dressings and you have yogurt based things, flavored yogurts which were not there probably in earlier times

So the diet would consist of various millet's in fact today, things like finger millet, you have the fox tail millet So these are derivatives which are used, they are used in combination of atta's today or flour's because the multi grain works far better than just having one nutrient You get the best of all worlds
