Healthy Low Carb Cauliflower Shrimp Fried Rice

– You wanna eat a bowl of fried rice, without the guilt Now you can, with this simple, low carb, cauliflower shrimp fried rice recipe

(upbeat music) I don't know about you, but fried rice has to be one of my families favorite take-out dishes But I don't always love how it makes me feel afterwards And, I've been trying to eat low-carb So, I created a recipe that tastes amazing, and it makes me feel even better If you're looking for more grain-free recipes, veggie sides, and mainly low carb options, you've got to check out my cookbook, The Best Grain-Free Family Meals on the Planet

So many great recipes in there And this recipe is one you definitely are going to want to eat because it's everything we love about shrimp fried rice Tender cooked shrimp, soy sauce, a hint of sesame oil, fresh veggies, and since it's made with cauliflower rice, it's also a gluten-free, keto, and paleo friendly I mean, does it get any better I don't know about you, but I'm getting hungry, so let me show you how it's made

Let's give these green onions a quick chop, making sure to keep the whites separate from the greens For this recipe I'm using about six cups of cauliflower rice, you can used prepackaged, or make your own Which, you can see how to do that in this video And I'll make sure to link that below So, in a small bowl, I'm going to whisk together the soy sauce, or tamari, or coconut aminos, whichever you prefer, honey, grated ginger, and red pepper flakes

In a large skillet or wok, over medium high heat, let's heat up the sesame oil Add the white part of the onions and saute for about a minute Add the frozen peas, carrots, and stir You'll want to saute these until the carrots are tender What's fried rice without scrambled eggs? So, before I add them in, I'm going to give them a quick whisk

Just move the veggies to one side of the pan Add a little more oil if you don't have a nonstick pan And, add in the beaten eggs You're gonna cook these slowly, while stirring, until they're cooked through Now, we just remove the veggies and the eggs from the skillet

Let's add a little more sesame oil to the skillet and toss in our shrimp You'll wanna cook these for about two minutes, or until they've turned pink Don't cook them too long because they'll get tough Now, we just add the veggies and eggs back into the pan Add in the cauliflower, and stir

The final step is to pour that soy sauce mixture over the top, toss to combine, and cook for a few minutes until the cauliflower has softened Oh my God What an aroma, all the Asian inspired flavors are all in here Now that the cauliflower's tender, we just sprinkle on the green onions I'm gonna cover the pan for about a minute, and go get the plates

Finally the moment we've been all been waiting for, it's time to actually eat it You guys, I'm hooked I'll never need to order take-out fried rice again The cauliflower absorbs all those flavors from the soy sauce, the sesame oil It blends perfectly with the shrimp and the veggies
