Easy Keto Chicken Alfredo
Make 1 batch (around 10-12) crepes from the link above
debone 1 rotisserie chicken and cut in little chunks
1 carton of mushrooms
2 cups of spinach (we used leeks but spinach would be better on carbs)
1/2 cup butter
4 oz cream cheese
1 cup of parmesan cheese, shredded
2-3 cloves garlic, chopped
2 cups heavy whipping cream
Stir fry mushrooms and spinach in butter until tender, add rotisserie chicken and let heat through. Set pan aside while you make the sauce
Melt the 2 T of butter in a saucepan on medium heat and sautéed the garlic. Add the heavy whipping cream and the 4 oz of cream cheese until the cream cheese is fully melted.
Add the parmesan cheese, and keep on low until the cheese is fully melted as well and set off od heat.
Roll up the filling (about 2 T) into each crepe, and set in casserole dish like you wold enchiladas. Top with Alfredo sauce, and bake for 20 minutes at 350f. Just enough to heat through.
